The girls and I have been stuck in the house a lot lately. We had a snowstorm followed by another snowstorm with barely enough time in the middle to resupply. At the end of the week the girl's school held parent-teacher conferences so that was another two days in the house. All of us want to go back to school/work and get our regular schedules.
To start down that path we decided to make Mini Toddler Cherry Cheesecakes
- 1 8oz package cream cheese
- 1 egg
- 1/3 cup sugar
- 1 tsp vanilla
- 6 graham crackers
- 4 tbsp butter
- 1 Can dark, sweet cherries
Place the egg, cream cheese, sugar, and vanilla in a mixer on medium. Mix until thoroughly combined and whipped. Melt butter and mix with crushed graham crackers. Place a 1/2 tbsp crust mix in each of 12 muffin tins. Divide cream cheese mixture between muffin tins. Bake for 15 minutes at 350 degrees. Cool. Top each muffin with 3-4 cherries.
