Happy Birthday #SundaySupper! The team is celebrating the first anniversary of an amazing movement to get the family back around the dinner table at least once a week. It has been a fabulous year and to celebrate we are making a recipe from one of our favorite members, Sunithi, a Registered Dietitian and creator of all things yummy. Her site, Sue's Nutrition Buzz has tons of healthy and tasty recipes the entire family can enjoy. We know you will love what she is all about because we want to make all of the recipes on her site.

This week we tackled her gluten free pumpkin muffins and could not be happier. The recipe is a little different because it does not use traditional flour and there is not rising agent. I had Maurene as my assistant this time and she had so much fun cracking eggs and pouring ingredients into the mixer that it was time to scoop the muffins into the pan before I realized we did not put any baking powder in the mix. It was not missed. These muffins are so flavorful and moist that you will want to eat three (the girl's daddy did).

Her pictures are better than mine as well because I doubt she had a three year old filling the muffin tins. Our muffins were strange blobs in the tins because I did not go back after Maurene plopped them in to the tins to even out the batter. Since they have no rising agent and were a dense batter they stayed where she put them while baking. No matter, they were scrumptious.

ReplyDeleteI wish we had made a double batch because they are gone! I think it was because we left them out for daddy to get to. The pumpkin made them so moist and the fruit was perfect.
