And now, from the people who brought you #SundaySupper, we give you a simple meal for #WeekdaySupper! And before you read the ingredient list or look at the photos know that there are several convenience items in this recipe so food snobs need to go somewhere else for dinner ideas. This recipe is for when you are too busy to remember to stop by the store for ingredients and for those days you invited people over for dinner but don't have time to cook. Make this casserole any time during the week and freeze or refrigerate it until dinnertime. It can also be easily assembled and baked for 30 minutes while you clean up the kitchen and get ready for dinner.
|Simple ingredients to keep on hand.|
Chicken Broccoli Casserole
- 1 box chicken stuffing and ingredients to prepare
- 1 1/2 lbs chicken breast, cooked and cut into cubes
- 1 10-16 oz bag frozen broccoli or mixed vegetables
- 1 can condensed cream of chicken soup plus can full of milk
- 1 1/2 cups shredded cheddar cheese
|Don't play with the chicken.|
Make stuffing according to directions on the box. Add chicken, broccoli, and stuffing to a 13 x 9 baking dish. Mix soup with can full of milk and pour over casserole. Spread cheese on top and cover with foil. At this point you can bake it at 350 degrees for 30 minutes or place in the fridge or freezer. If serving immediately remove foil after 30 minutes and bake for an additional 10 to finish melting the cheese. We like to serve this with a simple side salad or soup. It is simple to make and taste great.

If you were wondering, we have a busy week ahead and needed to make this dish during our free time. This happened to be right after we got up. We baked the dish and it is ready to heat for dinner.
