Mini Risotto Cakes & #HAWMC

Local chicken, Cascadian Farms peas, apples, risotto.

I have wanted to try to make risotto for a long while but the girl's daddy says he hates it. Now that he is away we can try a few new things.

I pulled out our Cook it in a Cup Cookbook and found an easy recipe the girls can help with.

Adding rice.

Filling tins.

Someone did not do their math well or the recipe was incorrect because we ended up with too much rice for the tins. I will just share how to make an individual cup.

  • 2 tbsp Arborio rice
  • Dash salt & pepper
  • Broth to fill tin
We made a 6 cup tin and it called for 1 1/2 cups of rice. With 2 tbsp in each cup it should have been 3/4 cup. The recipe listed 3 cups of broth for 6 cups but we did not measure we just filled the tins.

Bake at 350F for 20 or until liquid is absorbed. This made a fabulous addition to a simple yet tasty meal.
