Daddy is still gone during the week so I have been letting the girls focus our dinner plans a little more. Since they love anything in a muffin tin we had another mini meal. This dinner was inspired by a fun dish in Ready, Steady, Spaghetti. I checked this book out at the library but think I may need to grab my own copy as it is so full of fun ideas.
This dish is very similar to the Mini Spaghetti Pies we had last week.
Mini Alfredo Pies
- 1 pkg Ramen Noodles, seasoning pack discarded
- 1 cup cooked, shredded chicken
- 1/2 cup peas
- 1/2 cup Alfredo sauce
- 1/2 cup shredded Mozzarella cheese
- 2 eggs
- Dash of salt and pepper
Cook noodles according to directions. In the meantime mix remaining ingredients in a medium bowl. Drain noodles and toss in bowl. Grease a 6 cup muffin tin and divide ingredients between tins. Bake in a 350F oven for 15 to 20 minutes.
As I was placing the tin in the oven I thought the mini pies needed a small amount of breadcrumbs and grated Parmesan cheese mixture sprinkled on top. Next time!
The prompt for Health Activist Writer's Month Challenge for today is to write a letter to the 16 year-old me.
Dear 16 year-old Kris,
Stop eating fries and Nutty Buddies for lunch or skipping lunch entirely to smoke. Your lunch money should be spent in the cafeteria. That salad bar may have little more than iceberg lettuce and chopped tomatoes but it is better than sugar and nicotine. In 25 years no one will care how cool you were during the lunch hour hiding out in the back parking lot.
Also, start exercising. Skinny does not count if you have too much body fat from no physical activity. You will love running and you have the body for it. If you start now it will be so much easier for you in your late 30s trying to get rid of those last 10 lbs of baby weight.
