Muffin Tin Monday, Egg Buffet

Maurene's overflowed a bit.

Audrey added one mushroom.

My girls love scrambled eggs. But it is hard to get them to try new flavors of scramble. I came up with an idea to offer a filler buffet to allow them to have  DIY scramble bar. It turned out very cute but they did not try much this time. We will try it again. They did like the egg, cheese, and ham part of the menu. Then Maurene suggested grapes as a side.

I chopped up and offered them red onion, mushrooms, spinach, cheese, ham, and sun dried tomatoes. They filled their tins and then we poured egg on top. Audrey helped me crack and stir up the eggs in a glass measuring cup. We then microwaved them on 50% for two minutes. It was quick, tasty, and simple.

I went ahead and used the remaining items to make a quick microwave scramble for me too. With a little salsa and cottage cheese on the side it was a delightful meal.

  1. Sounds yummy! And my daughter wouldn't have gone anywhere near the mushrooms, so Audrey's one up on her there!

  2. We eat lots of eggs because of our chickens. I often whisk in salsa verde while I'm scrambling them. It gives them a nice flavor :-)
