Green Eggs and Ham

Green eggs, turkey, mandarin oranges, and homemade yogurt.

Audrey asked for green eggs and ham this morning. I don't know if it was all of the talk about going to see The Lorax movie this weekend, our trip to a book reading last Saturday for Read Across America, or just that she likes green eggs.

I was completely unprepared for the request and did not even have ham in the house. We subbed turkey. Audrey pulled the frozen spinach cubes out of the freezer and helped me make this delightful morning meal.

We like to add spinach to our eggs to make them green because it add nutritional value but does not change the taste of the food. Plus is eliminates the need to use artificial food dyes. I might try a little avocado to make them a little greener next time. Maybe for St. Patty's Day.

Audrey's Tasks:
  1. Help gather ingredients
  2. Crack eggs
  3. Stir
Mom's Tasks:
  1. Mix eggs with milk
  2. Add eggs to pan
  3. Make sure Audrey was stirring enough
  4. Place eggs on plate to serve
Such a happy day. Spontaneous kids cooking always makes me happy. I don't think she even knows tomorrow is Dr. Seuss's birthday.
