Baked Oatmeal, To Go!

Yummy, healthy oatmeal.

I have had this Baked Oatmeal To Go recipe pinned for quite a bit now. They look so yummy and healthy! We went to see my family for Spring Break last week and my in-laws were visiting until this morning. As soon as Audrey got up I pulled out the ingredients and had her help me. They were so good! I altered the recipe so I will include it here.

  • 1 egg
  • 1 cup applesauce
  • 2 1/2 cups rolled oats
  • 1 mashed banana
  • 1 1/2 cups water
  • 2 tbsp flax seed meal
  • 1/3 cup honey
  • 1 tbsp cinnamon
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1/2 tsp salt
Mix all ingredients. Place in greased or lined muffin tin and bake at 350F for 25-30 minutes. We had enough batter for 12 regular and 12 mini muffins. Audrey helped me place chopped apricots on the mini muffins.
