Bacon Spinach Salad

No we did not fall off the earth. It has been extra busy at the office and the girl's daddy has needed our help. We have not been cooking as much but still took time last week to make a favorite family salad, Bacon Spinach Salad.

Even though we love it we do not serve it much because it requires several steps to make. Recently I started having Maurene help me make this favorite over several nights while cooking other foods.

  • 2 lbs spinach
  • 1 lb leaf lettuce
  • 1/4 lb bacon crisped and crumbled
  • 1 1/2 cups cottage cheese
  • 1 tbsp onion juice
  • 1 tsp salt
  • 1 tsp dry mustard
  • 1/4 cup sugar
  • 1 cup salad oil
  • 1/3 cup cider vinegar
Process onion to get juice. I usually do an entire onion and save the remaining juice for next time. Use the onion flesh for meatloaf or any other place you want a fine chopped onion. We crisp our bacon in the oven on a cooling rack placed on top of a cookie sheet. Combine remaining ingredients and toss with torn salad. If you purchase baby spinach it will not need to be torn. The lettuce can be chopped easily with a knife after washed. I like to mix up the dressing and place it in a separate container. Keep washed and chopped lettuce in a bowl and you will be ready for a yummy salad anytime.
