Muffin Tin Monday, Red Pepper Eggs

I saw a cute picture somewhere of an egg cooked in a red pepper slice. At the store I spotted red peppers and explained my idea to the girls. They seemed open to it so we purchased the red pepper. Come Muffin Tin Monday time we were all stumped about what to eat. I had recently cleaned the fridge and knew there was little exciting to eat in there. Maurene spotted Eggland Best's eggs and decided we should have those for lunch. And that is when I remembered the red pepper.

Maurene cracked the egg while I sliced the red pepper. Audrey decided we needed a little lettuce from our cute leaves in the pot on our counter. It got cold so we brought them in and just never ate many. They are too cute to eat.

They got really cold.

Also decided by Maurene was the orange and raisins. Audrey added a desire for cantaloupe and I added ham and pineapple. It was a collaborative effort!

The egg was really good! Maurene, the eternal toddler picky eater, would not try hers so I got it. Audrey ate the egg out of the red pepper but did not care for the pepper. All I can ask is that they try! After requesting the lettuce neither girl ate any. At least they are starting to ask.

  1. Haha, I love this post(0: Yep, sometimes my girls are all "Ooo spinach! More spinach,, we love it!" and the next day they'll suddenly decide they hate it and aren't I a silly mommy for even suggesting they eat such a thing, lol. It cracks me up, but hey they've got to start somewhere, right? I love you egg in a pepper idea, that is so cool! We've gad spanish rice stuffed green peppers before, but this sound even easier and maybe even more tasty. Thanks for the great idea, we'll have to try it(0: Merry Christmas!   3. Definitely have the problem of children requesting something and then not eating it.
    I LOVE the idea of the egg in the red pepper. Not quite sure how to do it though.
    I always like to keep the muffin tin a "surprise" but I am wondering if I should have the girls help once in a while. They love helping in the kitchen. They did help today with part of it, but they still didn't get to see me making the tin.
    Looks like a great lunch all together.

  4. Looks like a yummy healthy meal. It sure can be hard when you have a picky eater. I am forever working on my son to try things I know he would like.
