Fruit & Nut Ice Box Cookies

These have to be the best cookies we have ever baked. So full of nuts and dried fruit they are flavorful and filling. The main decision to make this recipe was the copious amount of dried fruit and nuts we had in our snack cupboard. (We like quick and tasty snacks.) As a matter of fact we had enough for three batches, 2 cups of fruit and 2 cups of nuts in each batch!

With a cup of butter and 2/3 cup sugars there is no way I would call these cookies healthy. However, they are brimming with so many nuts and fruits a treat of three could almost be called a serving of fruit and protein. Enjoy them as the treat they are but relish in the added nutrients a plain cookie would not deliver.

Fruit & Nut Ice Box Cookies
  • 2 cups dried fruit
  • 2 cups chopped nuts
  • 1 cup butter, softened
  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • 1 tsp almond extract
  • 1 egg
  • 1 2/3 cups flour
  • 3/4 tsp baking soda
  • 1/2 tsp salt
Combine butter and sugar in mixer and beat together. Add egg, almond extract, baking soda and salt, mix until combined. Slowly add flour until all incorporated. Removed bowl from mixer and stir in fruit and nuts. Shape into two logs and wrap in plastic. Chill 3 hours or overnight. 

To bake, remove from plastic and cut 1/2 inch thick. Place on a greased cookie sheet and bake at 350F for 12-15 minutes. Cool on a wire rack.

Be careful, these cookies smell really good while baking and your family will state you are torturing them if you make three batches for a cookie swap and do not give them one.

Audrey saw the recipe book out while I was typing this post and she begged to make the recipe again. They really are amazing!
