Audrey has been working on her famous Oven Fried Chicken since she started cooking. It has changed to be more chicken nugget than traditional fried chicken leg. The move to boneless meat was simply due to that being what was on hand. And cutting it into bite sized pieces is obviously for the toddlers who are making the dish. That is how the chicken nugget was born. At least in Audrey's house.
As a family we prefer dark meat which is a fattier meat. For that reason we do not add butter or oil to the dish anymore. It ends up being a recipe of chicken, seasoning, and Italian breadcrumbs. The trick we have started using is to cook the dish in the microwave. It takes around 10 minutes of prep time and 10 minutes of cook time making it an easy weeknight meal.
If you have everything prepped ahead of time you can shave most of the 10 minutes of prep time. We like it with spaghetti and candied carrots for a fast, filling dinner.

We usually make bread crumbs in large batches and keep them in the fridge until needed. If you make your own you just need to add a little seasoning to make them Italian.
- Boneless chicken
- Italian breadcrumbs
- salt and pepper
Cut chicken into bite-sized pieces. Place chicken in a glass baking dish. Add salt, pepper, and breadcrumbs. Stir until completely coated. Place uncovered in the microwave. Cook for 9-15 minutes, checking for doneness. While the chicken is cooking prepare spaghetti and candied carrots. Dinner is ready in 30 minutes or less. Even with help.
