Chicken Packets, Homage to Mom

My mother would have been 55 years old yesterday. We lost her when I was pregnant with Maurene. It is tough to explain to Audrey about another grandma because I do have a step-mom and she completes the grandma quotient. Audrey and I look at pictures some times and talk about 'my mommy who died.' I do not know how much she understands but I like to try anyway.

To celebrate her birthday we made one of the only meals my mother taught me to cook, Chicken in Mushroom Soup. Mom used condensed mushroom soup but I just made a roux and added cooked mushrooms. Maurene was my assistant because Audrey was running errands with daddy. Mo's favorite part was chopping up the mushrooms. When it came time to place all of the ingredients in on the foil she was more interested in watching. This is a super easy recipe and can accommodate many adjustments. And it is just fine if you use condensed cream of mushroom soup!
  • boneless chicken
  • cooked rice
  • cream of mushroom soup
Divide evenly between the number of packets you are cooking. Fold foil tightly. Cook at 350 degrees for 25-45 minutes depending on the type of chicken.
