I thought the hot days of summer were were behind us. My eat healthy plan relies on cooking more from scratch. That usually involves the oven and stove top. Yesterday it was close to 100 degrees. We simply reverted our plan to include more slow cooker preparations. And lovely Maurene helped. We placed a previously baked chicken carcass in the crock and added water. She carefully turned the cooker on and we forgot about the beautiful homemade broth until dinner when we used it to brush over chicken thighs before we baked them with some onions and mushrooms. There was plenty of broth to freeze for many more uses.
Homemade chicken broth is easy and it is made with leftovers! Be sure to get a helper to pull the meat off the bone for you:
