It's Hot, Slow Cooker Time

Ok, so it is not as hot as it was Tuesday (110F) but still warm enough to dissuade me from turning on the oven. I always think of the slow cooker in the winter when I am craving chili or soup but forget about it in the dead of summer. It is clean out the pantry time and I found some lentils. They go great in a 2 hour oven dish but I have yet to learn how to translate that to the slow cooker. So I adapted a recipe from my $5 Dinner Mom Cookbook.

Sweet and Sour Lentils

  • 1 cup lentils
  • 1/2 cup apple cider vinegar
  • 3 cups water
  • 3 tbsp brown sugar
Place all ingredients in your slow cooker and cook on low for 4-5 hours. It did not go over as well with the toddler set but they both gave it a taste. This would be fabulous with a ham bone or some bacon. I am going to use the leftovers for a nice soup with some type of pork product. It might need a little sauteed onion as well.

  1. Gather ingredients
  2. Assist girls
Yes, she was still in PJs at noon.
