Sausage and Cheese Brunch Muffins

These muffins are a bit heavy for breakfast but they are so tasty there is no reason they could not be the centerpiece of a nice Sunday brunch.

  • 2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 egg, beaten
  • 1 cup plus 2 tbsp milk
  • 1/4 cup butter, melted
  • 1 cup sausage, browned and crumbled
  • 1/2 cup sharp cheddar cheese, grated

Preheat oven to 350°F. Mix dry ingredients together in a large bowl. Add egg, milk, and butter and mix until just combined. Stir in sausage and cheese. Do not over mix. Grease twelve muffin tins and fill to 3/4 full. Bake for 20 minutes or until toothpick inserted in center comes out clean. Let cool for about 5 minutes then remove to a cooling rack. Enjoy!
