Oven Fried Chicken, Audrey Style

Once apon a time I was a single girl trying to impress a boy. Cooking was never my strong suit. I turned to my favorite cookbook, Better Homes and Gardens New Cook Book, for help. In there I found a simple recipe for an oven fried chicken. We loved it and I continued to make the dish.
Fast forward several years and that boy and I are now parents to two picky girls. When Audrey and I started cooking I pulled out the tried and true recipe and tested it with her. She loved it as well. We have made several changes to make it our own but it still simple and tasty.

Audrey's Oven Fried Chicken Nuggets

  • 4-5 boneless chicken thighs (or 2 breasts if you prefer)
  • 1/2 cup dried bread crumbs
  • 1 tbsp Italian Seasoning
Preheat oven to 350°F. Cut chicken into bite sized pieces. If you are using chicken breast you will need to brush the pieces with a small amount of melted butter. Place chicken in a large zip top bag or lidded container. Add bread crumbs and Italian seasoning. Seal container and shake! Bake for 15 to 20 minutes or until chicken is cooked through. 

Audrey's Tasks:
  1. Help make breadcrumbs
  2. Add crumbs and chicken to container
  3. Shake!
Mom's Tasks:
  1. Cut chicken
  2. Assist Audrey
  3. Bake chicken
We like to use dark meat which does not require any extra fat in cooking. White meat is lower in fat so it needs a little butter or olive oil for baking. These chicken nuggets taste so much better than anything you get at a fast food establishment or the grocer's freezer.
