Bacon, Egg, and Cheese Muffins

I love a great convenience meal. So do the girls. However, our ideas of great meal differ. Audrey loves cupcakes and muffins. They are handy and tasty. What she does not realize is how much I have to plan to make sure she has a muffin whenever she wants one. I decided to come up with an easy way for the girls to help me make a batch or two of muffins each week so that we can have a quick snack for on-the-go or a light breakfast. Here is the plan:

Maurene's Tasks (23 months old):

  1. Pour all of the dry ingredients into a large bowl
  2. Stir
  3. Spread bacon on top
Audrey's Tasks (3 1/2 years old):
  1. Crack egg and beat in medium bowl
  2. Pour remaining wet ingredients into bowl
  3. Stir
  4. Pour wet ingredients into dry ingredients
  5. Scoop batter into tins
Mom's Tasks (too old to mention here):
  1. Preheat oven
  2. Grease tins
  3. Moderate bickering
Here is the recipe:
  • 1 1/2 cups unbleache all-purpose flour
  • 1/2 cup whole wheat flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup brown sugar
  • 1 egg, beaten
  • 1 cup milk
  • 1/4 cup butter, melted
  • 1 cup scrambled eggs (3 egg whites and 1 egg plus 2 tbsp milk worked for me)
  • 1/2 cup grated cheese
  • 1/2 cup cooked, chopped bacon
Preheat oven to 400°F. Mix dry ingredients in a large bowl. Mix wet ingredients, up to butter, in a medium bowl. Add wet to dry and mix until just combined. Add scrambled egg and cheese and stir to combine. Filled 12 greased muffin tins 3/4 full and spread bacon on top. Bake for 18-20 minutes.

  1. Cute pics. The recipe sounds yummy too. I’m in total amazement of how clean your counters are! When I bake with my kids I can’t even see the countertops underneath all of the drips and spills.

  3. It is the counter top, hids spills. They have been baking with me a long time and both are getting better about spills. We still have them but not as many as we used to!

  4. What a fun recipe to do with the kiddos. The girls are going to love being my helpers when I try this one out.
