Audrey had a friend over recently and they made Pineapple Upside Down Cupcakes. It was a simple activity with pretty immediate results. While they finished playing I baked the cupcakes so they could eat them after lunch. I used the Busy Day Cake Recipe from Better Homes and Gardens New Cookbook.

- Help measure and add ingredients
- Crack Egg
- Operate stand mixer
- Fill tins
- Gather ingredients
- Assist girls
- Bake cupcakes
These were easy and tasty. I put a little caramel in the bottom of each tin but I think next time I will put it on top after they bake. Pineapple chunks should go in the batter instead of the bottom of the tin as well. We will continue working on this recipe and share the final version once we think it is great. I had too much fun baking to remember to take pictures.
