No Mexican Food Here

Sorry, we don't eat much of it. We do make some guac every now and then but that is little more than squeezing a few avocados with some lemon juice and seasoning. For our Cinco de Mayo celebration we are having...
No Bake Cookies. Yep, they rock.
Most of the time I let Audrey help measure and pour but the last time we had company coming over soon and needed to get the cookies chilling quick. I measured and let her add, heat, and stir. We made this batch in the microwave but they do work better in a double boiler. I found a great recipe on Allrecipes.com.
Audrey's Tasks:

  1. Add ingredients
  2. Stir
  3. Place cookies on cookie sheet
Mom's Tasks:
  1. Gather and measure ingredients
  2. Melt
  3. Assist Audrey
I love the idea of a cookie we can make without baking. We really should try some crispy treats soon as they promise to be fun to make as well.
And simply because I am a historian, please look up Cinco de Mayo and familiarize yourself with the history behind the event. It is not independence day for Mexico from Spain.
