April 8 Bananas and Scrambled Eggs?!

Yep, that is the recipe Audrey picked out of our recently discovered Kids in the Kitchen cookbook. It is actually called Banana Fiesta and here are the ingredients:

  • 3 bananas
  • 1 tbsp butter
  • 6 eggs
  • 1/2 cup raisins
  • 1 tsp cinnamon
  • 1 1/2 cups yogurt (optional)
Peel the bananas and cut them into thick coins. In a frying pan, saute the bananas in the butter until they're browned. Beat the eggs with a whisk in a small bowl, then add raisins and cinnamon. Cook the egg mixture in a saucepan on low heat. Add the bananas to the egg mixture and serve. It tastes better if you put yogurt on top!

Audrey's Tasks:
  1. Gather all ingredients (except the cinnamon was too high)
  2. Crack eggs and whisk
  3. Slice bananas
Mom's Tasks:
  1. Cook eggs and serve
This was a mostly Audrey meal. If we could get her over her fear of the stove we could start working on the cooking part.
We skipped the yogurt but it tasted good anyway. The bananas really add something when they are sauted. We all enjoyed this recipe.
