April 12 Audrey Speaks for Pancakes

There is a downside to empowering your child in the kitchen. On the way home Audrey declared we needed to have pancakes for dinner. Why pancakes? I have no idea. Pancakes it was. Audrey's daddy was out of town for the military for several weeks at the end of the summer. He purchased a box of Bisquick to feed himself. We don't use it much but I thought this was a good way to finish it up.

Bisquick Pancakes

  • 2 cups Bisquick
  • 1 cup milk
  • 2 eggs
Add all ingredients to a bowl and whisk. Heat a non-stick skillet to medium and add 1/4 cup batter. Cook 2 minutes or until bubbles begin to form. Flip and cook another 1 1/2 minutes.

  2. Crack eggs
  3. Measure and add ingredients
  4. Mix
Mom's Tasks:
  1. Help gather ingredients
  2. Assist Audrey
This is a classic. We added some frozen blueberries and they were wonderful. A little low-sodium turkey bacon and over-medium eggs rounded out the meal.

  1. My daughter loves having "breakfast" for dinner and it must include pancakes.

  2. We often do pancakes in the evening because I let the whole wheat or oats soak in yogurt all day. I think official name for it is 'brinner." Breakfast for dinner.

  3. Now that we have the fabulous bowl with the lid I am planning to make an oats batter. Would love a recipe recommendation.
