Toddler Meal Nacho Cups

Fridays are always scheduled for toddler meals because Mom and Dad usually have date night. Even though Audrey's dad is out of town for a few weeks I thought date night would still be in order. I went out with a girlfriend. Audrey and Maurene enjoyed a new meal from the Cook it in a Cup cookbook:

  • 1 (16 oz) bag tortilla chips
  • 3/4 cup refried beans
  • 3/4 cup chicken, cooked and chopped (optional)
  • 1/4 cup shredded cheese
  • 6 tbsp salsa
  • 6 tbsp sour cream
  • 1/2 avocado, peeled and cut into cubes
Preheat oven to 350°F. place about 5 tortillas in 6 baking cups. Put 2 tbsp refried beans in each cup. Top with 2 tbsp chicken, if desired. Evenly sprinkle cheese on top of each cup. Place cups on baking sheet and baking for 10 minutes or until cheese is melted. Top each cup with 1 tbsp each salsa, sour cream, and avocado. 

Audrey's Tasks:
  1. Ask why the avocado is green
  2. Ask why the chips stand up in the baking cups
  3. Ask why we put cheese on top of the chicken
  4. Place ingredients in cup
Mom's Tasks:
  1. Gather ingredients
  2. Answer all the questions
  3. Bake
It was one of those evenings. The fact that I was going out and still needed a shower may have played a role in why I was not interested in answering all of the questions. The girls were a bit skeptical of the nachos. We will try this again as I loved the ease with which this meal came together. They enjoyed their nachos with fruit.

Side Dish - Seasonal Fruit
