Happy Birthday Dr. Seuss

Audrey and I made Truffula Fruits for the Brown Bar-ba-loots. They were yummy and also resembled mini muffin considerably:

  • 2 cups flour/grains (we used 1 cup all purpose and the rest a mixture of whole wheat and oats
  • 1 cup Pomegranate/Cherry juice
  • 1/4 cup fat (we used 2 tbsp canola oil and 2 tbsp applesauce
  • 1 egg
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1 tbsp cocoa powder
  • 1/2 tsp salt
  • 3/4 cup chopped frozen cherries
Heat oven to 350°F. Mix dry ingredients in a medium bowl. Beat egg and add oil, juice and applesauce; mix well. Add wet ingredients to dry ingredients, stir until just combined. Fold in cherries. Spray mini muffin tin with cooking spray and fill to 3/4 full. Bake for 20 minutes.

Audrey's Tasks:
  1. Chop cherries in food processor
  2. Help measure and add ingredients
  3. Fill muffin tin
Mom's Tasks:
  1. Gather ingredients
  2. Assist Audrey
  3. Bake muffins
These were yummy. Audrey and Mo's sitter came over while they were baking and she loved them. After I ate four I was able to send the rest home with her. Audrey was so proud of the fact that she made Truffula fruits. While the muffins cooled we put together a salad for Yertle the Turtle and his friends. I thought the novelty of turtle food might make it more appealing but Audrey was not much in an eating mood tonight. I will try again later. Yertle can come to dinner any time he wants.

  1. Aw, that is so cute! How fun! I wish I would have done something with Hayden for Dr. Seuss birthday!

  2. This is our first year. And came up with the idea while drinking coffee this morning. No planning went into it. Next year I would like to actually make something that looks like the pictures in the book.
