Smart Eggs for Toddlers and their Moms

Yummy ingredients.

Audrey is starting to attract a little attention. We received an email the other day from a representative of Eggland's Best. They shared some wonderful nutritional information about their product and asked if Audrey would like to try their eggs. We said yes. With the nutritional information they provided I was intrigued. At the store this week I compared the price of the store brand eggs with Eggland's Best. There was only a .70 cent difference! I could not wait, I had to purchase a carton. Read the nutritional information and tell me you wouldn't spend an extra .70 to provide over twice the Omega 3, Vitamin A and Vitamin D to your child(ren). We used them to make Mini Frittatas from Audrey's Picture Me Cooking cookbook.

  • 3 large eggs
  • 1/4 cup milk
  • A few dashes of salt and pepper (we skipped this)
  • Butter
  • Your favorite ingredients
Preheat oven to 350°F. Grease a muffin tin with butter (we skipped this step and it was fine). Whisk eggs, milk, salt and pepper. Pour egg mixture into rounds filling 3/4 of the way. Sprinkle chosen topping on the egg mixture. Cook 15-20 minutes. Cool and eat!

Audrey's Tasks:
  1. Get all of the ingredients out
  2. Crack eggs
  3. Measure and add ingredients
  4. Whisk
  5. Pour into tins (Maurene helped as well)
Mom's Tasks:
  1. Cook bacon
  2. Assist Audrey
  3. Bake eggs
This is a great way to make the entire family happy because you can put different ingredients in each tin. I added green pepper and the girls wanted extra cheese. I found low sodium turkey bacon that tasted great!
