January 5 Oven Fried Chicken

This meal is on regular rotation at our house. It is easy to make and Audrey can almost prepare it by herself. I recently made a change to use olive oil instead of butter and we sometimes use crushed cornflakes instead of breadcrumbs. It makes the meal easier for Audrey to lead the cooking instead of the other way around. Oven Fried Chicken can be made with any cut of chicken you prefer (or what is on sale) and with a variety of fats and breadings. Try adding a small amount of Italian Seasoning to your breadcrumbs next time, it is so tasty. Here is a picture of Audrey making this meal for us spring 2010 (yes, she is cooking naked):
