Continuing with the idea that it does not take a lot of time to cook with your child, Audrey and I made cupcakes from a mix. The mix was on sale and directed at children so I splurged. It was very easy and fun for Audrey. She was able to use the egg beater that she adores as well as crack two eggs. I also let her color the cupcakes blue. This last part was more to disguise the fact that I slipped half a cup of shredded zucchini in the batter before we put it in the muffin pans. Audrey called the muffin pans her "Muffin Tin Monday" pans. I found that very amusing. The mix we used is from Arrowhead Mills Bake with Me series. There was also a $1 off coupon, muffin liners, and an offer for a free child's apron inside. A pretty good deal for the $2 I spent for an organic mix.
This was the only decent photo I got because Audrey sprayed batter all over my camera with her egg beater. We are still working on keeping it in the bowl.
