Tip of the Day August 13

Flipping through an old church cookbook I came across a fun 3 ingredient bread recipe. Audrey and I had fun mixing the ingredients together and throwing the dough in the fridge. She had to try the butter and flour as we added them. I did not discourage this as I would like her to be open to try new foods.

Cottage Cheese Rolls

  • 1 cup of butter or margarine
  • 12 oz small curd cottage cheese
  • 2 cups flour
Mix all ingredients together and refrigerate for 4 hours. Divide into 3 balls. Roll out each ball into 12 to 15-inch circle. Cut 12 wedges as for a pie and roll up, starting with the widest part. Place on greased cookie sheet and bake until lightly browned, approximately 30 minutes.

Audrey's Tasks:
  1. Add and mix ingredients
  2. Help pat and roll balls
  3. Cut into wedges (with guidance)
  4. Help roll up
Mom's Tasks:
  1. Gather ingredients
  2. Assist
  3. Bake
These were so simple and fun to make. I loved the fact that we only needed 3 ingredients to prepare this wonderful recipe. Never overlook your church, market, or school produced cookbooks. They can be full of valuable recipes.

  1. That's a great recipe! It's similiar to what I've tried for egg-free/wheat free pancakes. I soak quick oats in yogurt then add butter or light olive oil before frying them. Oh wait, I guess I do add baking soda and salt, but I'll have to give this recipe a try.

  2. This looks great. I'll have to try it. I like easy things! Can you add anything else to "spice" it up?

  3. I am certain to find out soon as they have been requested again. The dough is very soft so it looks to take well to additions. Nuts and dried fruit would be easy. Spices would as well. This will be a staple in our house as we always have butter, flour, and cottage cheese around.

  4. "Hopping" over from blogfrog to say hi. What a *great* idea for a blog!! I love cooking with my 5 year old and am always on the hunt for simple recipes. Very cool. :)
