Carrot Applesauce Muffins

We are still here and still cooking. It has been a busy few weeks for us with trips and activities for the girls and school for me. I am on a brief break and hope to get us caught up and back on track. Here is a great recipe for Carrot Applesauce Muffins:
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/4 cup rolled oats
  • 1 tsp cinnamon
  • 1 cup milk
  • 2 tbsp canola oil
  • 1 egg
  • 3 tbsp packed brown sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup grated carrot
  • 1/2 cup applesauce
Mix dry ingredients in medium bowl. Mix wet ingredients in medium bowl. Add wet ingredients to dry and stir until just combined. Pour into lined or greased muffin tin and bake at 400°F for 15-20 minutes.

  2. Crack the egg
  3. Stir
  4. Pour batter into muffin tin
Mom's Tasks:
  1. Gather ingredients
  2. Help Audrey measure and add ingredients
  3. Place muffins in oven
These were a big hit. Audrey ate 5 mini muffins as soon as they cooled enough to consume. I was happy to find a healthy food she enjoyed. We will continue to work with this basic recipe to find other combination of healthy ingredients for good snacks.
