Tip of the Day May 4

The delay in posting this was because we made it for dinner tonight. And is it worth the wait! Recently I had the opportunity to look through a copy of The $5 Dinner Mom Cookbook. Not only is it frugal but easy too! The recipes are simple and rarely call for many ingredients. Tonight we made Pizza Wraps:

  • 6 tortillas
  • 1/2 jar (about 1 cup) pizza or spaghetti sauce
  • 15 to 20 pepperoni slices
  • 1 green bell pepper, thinly sliced
  • 2 cups shredded mozzarella cheese
  • 3 carrots
  • 1/2 watermelon
Preheat the oven to 350°F. On a clean work surface, lay out the tortillas flat. Spread 2 to 3 tbsp of sauce on each tortilla. Layer each with 1 to 2 rows of pepperoni and bell pepper slices. Sprinkle with the shredded cheese. Roll up the tortillas and place snugly into 8X8 baking dish. Bake in the preheated oven for 8 to 10 minutes, or until the cheese melts. Peel and cut the carrot into sticks. Cut the watermelon into slices, or dice into bite-size pieces. Serve Pizza Wraps with carrots and watermelon.

  3. Place pepper, meat, and cheese on tortillas
Mom's Tasks:
  1. Gather ingredients
  2. Put sauce on tortillas
  3. Roll tortillas up and place in dish
  4. Put wraps in oven
Super easy and tasty. This is a dish in which the quality of the ingredients counts. Buy or make quality sauce and toppings. Also, don't be afraid to mix it up. We normally have Canadian bacon on our pizza so that is what I used. Next time I will add pineapple. Prep takes about 5 to 10 minutes and they cook for 10 minutes so this is a good meal for busy nights. You could also prep and freeze this to cook later.
