Carrot Cake Cookies

Sesame Street Yummy Cookies: Baking with Kids is a wonderful book for cookies. Audrey and made  the best Carrot Cake Cookies. I selected this recipe because it calls for carrots and raisins and I thought it would be an easy way to get something nutritious in Audrey. She loved them. 

This is not a good all around baking book but is great for fun cookie recipes. There is also a nice section in the front about making healthy choices and how to make these recipes healthier. We will definitely be making this recipe again. And here it is:

  • 1 1/2 cups all-purpose flour (we used a small amount of whole wheat)
  • 1 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup packed brown sugar
  • 1/2 cup (1 stick) butter, softened
  • 1 egg
  • 1/2 tsp vanilla
  • 1 cup grated carrots
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins or chopped dried pineapple
Preheat the oven to 350°F. Grease two cookie sheets or line them with parchment paper. Stir together the flour, cinnamon, baking soda and salt in a medium bowl. Beat the brown sugar and butter in a large bowl with an electric mixer at medium speed until creamy. Add the egg and vanilla; beat until well blended. Stir in the flour mixture. Stir in the carrots, walnuts and raisins. Drop the dough by tablespoonfuls 2 inches apart onto the cookie sheets. Bake for 12 to 14 minutes or until the cookies are set and the edges are lightly browned. Cool the cookies on the cookie sheets for 1 minute. Transfer to wire racks to cool completely.

Audrey's Tasks:
  1. Mix ingredients together
  2. Crack the egg (she is getting much better)
  3. Drop cookies onto cookie sheets (with her fabulous cookie scoop!)
Mom's Tasks:
  1. Gather ingredients
  2. Help Audrey mix ingredients
  3. Help put cookies on cookie sheets
  4. Place cookies in the oven
Next time I am going to experiment with using a little applesauce in place of some of the butter.
